The setting people worry about matters least. MP3 discards detail that speech recognition does not lean on, so a 64 kbps voice memo usually transcribes about as well as a 320 kbps one, and variable bitrate is handled like constant bitrate.
What does matter is the recording itself: distance from the microphone, room echo, and whether two people talk at once. Mono is completely fine; a stereo file with two speakers panned hard left and right is not, because they overlap once mixed down. One file at a time, up to 500MB and 12 hours.
